Vegan American Style Pizza

Ingredients

1 small head cauliflower, cut into small florets

1 tbsp extra-virgin olive oil

1 tbsp apple cider vinegar

1/2 tsp garlic powder

1/2 tsp cayenne pepper

Kosher salt

Freshly ground black pepper

Cooking spray, for pan

2/3 cup barbecue sauce, divided

2 (220g packages) store-bought pizza dough

1/2 small red onion, thinly sliced

Method

Step 1:

Preheat the oven to 200°C. In a large bowl, toss cauliflower with oil, vinegar, garlic powder, and cayenne until evenly coated. Season with salt and pepper, then spread out on a large baking sheet in a single layer. Roast until the florets are tender and slightly golden, usually taking 20 to 30 minutes, depending on their size.

Step 2:

When you're ready to assemble the pizza, return the roasted cauliflower to the large bowl and toss it with 1/3 cup of barbecue sauce. Increase the oven temperature to 250°C and grease a large baking sheet with cooking spray.

Step 3:

Spread one ball of pizza dough onto the greased baking sheet. Thinly spread half of the remaining 1/3 cup of barbecue sauce onto the crust, leaving a 1/2-inch border. Top with half of the cauliflower and red onions. Repeat the layering process with the remaining ingredients. Bake the pizza until the crust is crispy, typically about 12 to 15 minutes.
