Vegan Banana Muffins

Ingredients

2 large bananas (about 225g), blackened and peeled

50ml vegetable or sunflower oil

65g light brown sugar

150g plain flour

2 tsp baking powder

2 tsp cinnamon

50g dried fruit and seed mix

2 tbsp oats

2 tbsp mixed seeds

Method

Step 1:

Preheat your oven to 180C/160C fan/gas 4. Begin by mashing the bananas in a medium bowl using a fork, then thoroughly combine them with the oil and sugar.

Step 2:

Next, incorporate the flour, baking powder, cinnamon, and dried fruit and seed mix into the banana mixture. Stir until thoroughly combined.

Step 3:

Prepare a cupcake (or muffin) tray by lining it with 10-12 cupcake cases (adjust as needed based on banana size) and fill each case about ¾ full with the batter. Sprinkle the tops with oats and mixed seeds.

Step 4:

Bake for approximately 25 minutes, or until a skewer inserted into the centre of a muffin comes out clean. Allow the muffins to cool on a wire rack before serving.
