Ingredients

4 Meatless Farm Chicken Breasts (or similar)

180g vegan butter

2 onions, finely chopped

2 tsp finely minced garlic

2 tsp finely minced ginger

6 cloves

5 cardamom pods, crushed

1 cinnamon stick

2g black pepper

2 tsp ground cumin

2 tsp ground coriander

½ tsp turmeric

200g tomato puree

1 tsp sea salt

750ml soya cream

Method

Step 1:

Begin by pre-heating your oven to 180°C, ensuring it's perfectly warmed for the next steps of your culinary adventure.

Step 2:

In a sturdy, heavy-bottomed pan, melt the vegan butter gently. Introduce the cloves, cardamom, black pepper, and cinnamon, allowing them to infuse the buttery richness for about a minute over medium heat. Follow by adding the finely chopped onions and a pinch of salt, sautéing for 2-3 minutes until they begin to soften. Incorporate the garlic and ginger, cooking for an additional minute to release their aromatic essence.

Step 3:

Into the fragrant mixture, stir in the tomato puree, along with the cumin, coriander, and turmeric, ensuring a harmonious blend of flavours. Allow the ingredients to mingle and develop for about 2 minutes, stirring continuously. Pour in the soy cream, ensuring it's thoroughly integrated, and let the sauce simmer gently over low heat for the next 30 minutes, allowing the flavours to meld into perfection.

Step 4:

While the sauce simmers to tantalising perfection, prepare your Meatless Farm Chicken breasts. Place them delicately on a lightly oiled baking tray, then roast them in the pre-heated oven for approximately 12-15 minutes until they achieve a golden perfection. Once roasted, allow the chicken to cool slightly before cutting it into bite-sized chunks. These succulent morsels are then ready to be immersed into the awaiting curry sauce. Let them simmer together for another 10 minutes, allowing the flavours to meld into a tantalising symphony.

Step 5:

To add a final touch of freshness and visual appeal, garnish your vegan butter chicken with a sprinkle of freshly chopped coriander. Serve this delectable dish alongside warm rotis and fluffy rice, inviting your taste buds on a journey of culinary bliss.
