Vegan Fajitas

Ingredients

1 tbsp vegetable oil

2 red or yellow peppers, cut into strips

1 red onion, sliced

1 garlic clove, crushed

½ tsp chilli powder or chilli flakes

½ tsp smoked paprika

½ tsp ground cumin

1 lime, juiced

400g can black beans, rinsed and drained

small bunch coriander, finely chopped

4 large or 8-12 small tortillas

1 avocado, sliced

Method

Step 1:

Begin by heating the oil in a frying pan, then sauté the peppers and onions over medium-high heat until they're tender and start to develop a golden brown hue, typically about 6-8 minutes. Introduce the garlic and spices to the pan, cooking for an additional minute until the aroma becomes fragrant. Squeeze in half of the lime juice, season the mixture, and transfer it to a serving dish to keep warm while you focus on heating the beans.

Step 2:

In the same frying pan, pour in the black beans and add the remaining lime juice. Season generously and stir until the beans are heated through and coated with any remaining spices from the pan. Incorporate most of the chopped coriander for added freshness.

Step 3:

Warm the tortillas either in the microwave or wrapped in foil in a low oven. Once warmed, cover them with a clean tea towel to maintain their warmth. Serve the wraps with the sautéed peppers and beans, alongside avocado slices, dairy-free yogurt, extra coriander, and additional lime wedges for squeezing, if desired.
